Having just bought a new camcorder, I recomend the Sony TRV340 at $699
Digital-8, with the ability to play old 8mm analog tapes. Digital Video out (USB and Firewire) from tape or route analog input out either DV port. Good Zoom, low light and nightshot capabilites.
ooo thanks! No tapes lying around and I'm a horrible photographer, I'm hoping I'll be better with home movies. I didn't want to spend too much at first, but then thinking about it, we will get LOTS of use out of it, so it might be good to make an investment. It just can't be complicated. I can build a network, but work a camera? no f'ing way.

Turn it on, point at what you want to record, push the button to start recording, push the button to stop recording.
To play the tape, plug in the AV cord, switch to VCR mode, push play.
